Found this gem! I saw a few interesting menu items while searching Yelp for restaurants in Laredo.
I was greeted by friendly and accommodating staff and decided to sit at the bar since I was dining alone. The manager, Mauricio, asked if I had dined with them before. I said no and he explained some of the restaurant's concepts.
I started with the appetizer that caught my attention from the website - Veracruzana Style Fresh Sea Bass Ceviche and also ordered The Baja Style Lobster Taco. The ceviche was a very generous portion of Sea Bass served with avocado and tostados. It came with a spoon which you will definitely want to use to capture every savory bite.
The Lobster Taco was overflowing with lobster chunks, saffron rice, black beans, avocado and creamy chipotle plus a spicy tart salsa to top it off.
The craftsman bartender, Miguel, was hard at work making fantastic beverages. I had the Smokey Guava -mezcal, guava nectar, lime & grapefruit juice, agave nectar & chia. It was exquisite! All of their juices are fresh squeezed...
My entree was the Homemade Mole Poblano - smothered shredded chicken in the best mole that I have had since visiting deep interior Mexico decades ago. I have been searching for great mole ever since and they have all fallen short until now. Served with almond rice - almond slices not slivers.
Overall the service and the food were perfect. The prices are very reasonable and the portions are large. Vegetarian options are available as well.

I really enjoyed the food for lunch here today, but the reviews about poor service shouldn't be overlooked.
Ordered the beet carpaccio, the tomato soup, and the chicken paillard from their 10th anniversary menu. The soup is killer - absolutely exceeded expectations. The salad was huge for eleven bucks and super fresh! I wasn't sold on the paillard - it's a special with corn, peaches, parm, and apparently chimichurri, though I didn't notice much. The sweetness of the corn and the peaches didn't totally go with the breading, but I was hungry and ate it all anyway.
What really bummed me out was the service. I was a solo diner for a late lunch and was the only patron in the restaurant for most of my meal. After I finished my entree, I sat for about 45 minutes without being asked if I wanted anything else or being provided the check. Not for a lack of serving staff - there were at least four or five people laughing and chatting as they set up for dinner service. When my server noticed my card on the table and came over, I asked for a scoop of gelato and the check.
I got my receipt shortly... and then waited seventeen minutes for dessert that never came before I crossed it off the check and walked out. I looked around for my server for several minutes before leaving, and he must have been in the back somewhere because I didn't see him again between having my check dropped at the table (and acknowledging my gelato should be on the way) and walking out.
I've worked in fine dining and my partner has owned a few restaurants so I generally consider myself more tolerant than most when it comes to service blunders, and I overlooked the comments about poor service here for that reason. Unfortunate, because this was just not acceptable. I was finishing my chicken a few minutes after 3pm and walked out at 4:13.

The food was 10/10. Hubby and I decided to share appetizers and I'm sorry we didn't take pics but we were so hungry that by the time I remembered to take pics the food was half way gone. We were greeted as soon as we walked, it's a small place but has a great atmosphere. Immediately the waiter came by and took my drink order. The Cumvertini was my 1st choice because I love cucumbers. It was refreshing and not overpowered with alcohol taste 10/10. The sea bass ceviche was so delicious too, served well with avocado and tostadas; great lemon taste and not fishy tasting at all. Next I ordered the Mexican Hipster, this one did have a stronger alcohol taste and gets a 7/10, still great but a little on the stronger side for me. Hubby got a Paloma and it was great for those that don't like sweet drinks 9/10. Next week ordered Ribeye Chicharron and I was not disappointed, it came on a bed of guacamole and topped with pico and side of lime and salsa. WOW! 10/10. Overall service was great, prices were reasonable and we were out in about 1 hour. Would definitely recommend.

Lolita's Bistro is hands down one of the best restaurants in Laredo. The quality of ingredients and preparation is excellent -- everything I've tasted is incredible. The staff is super friendly and accommodating. And the restaurant atmosphere, especially at night, makes for a great place for a date.

Love the ambiance, friendly staff and great food. Anything in the mami is delicious and nicely presented. I like finding seasonal dishes and drinks.
